Squash caviar for the winter
An excellent appetizer with a delicate flavor, which will be the perfect addition to sandwiches or spicy dishes.
Kitchen time 25 minutes
Ingredients
- Onion 1 piece
- Carrot 1-2 pieces
- Vegetable oil 60 ml
- Patissons 500 g
- Spicy pepper taste
- Tomatoes 400 g
- Garlic 2-3 cloves
- Salt taste
- Sugar 1 pinch
- Apple vinegar 30 ml
Preparation
- Cut the onion into small pieces. Pass the carrots through a meat grinder.
2 ․ Heat the oil in a skillet over medium heat and fry the carrots and onions for 5-6 minutes, stirring constantly.
3 ․ Pass the squash together with hot peppers and peeled tomatoes through a meat grinder and add to the same pan.
To make the skin peel off easily, put the tomatoes in boiling water for a few seconds.
Simmer vegetables for about 30 minutes over low heat, not forgetting to stir.
Pass the garlic through a press and add to the caviar along with salt and sugar. Leave on fire for another 15 minutes.
6 ․ Grind the prepared caviar with a blender or rub through a sieve. Stir in vinegar and bring to a boil again.
7 ․ Divide the caviar into sterilized jars and cover with lids. Store in a cool place after cooling.
