Minestrone recipe
Nothing like minestrone during winter!
Ingredients:
- Green Lentils
- Tomato sauce
- Water
- Rice pasta
- Quinoa(to thicken the liquid)
- Potatoes
- Paprika
- Salt
- Black pepper
- Cayenne pepper
- Oregano
- Basil
- Garlic
- Coconut oil
Cooking Instructions.
I freestyled most of the ingredients so bare with me. And it may take you a few times to perfect your ideal batch.
Add accordingly to the size of your pan.
Soak green lentils for 1 hour(before you start with anything else)and cook separately until soft.
Add your liquids. I added around 400g tomato sauce accordingly and the rest is water
Make sure the amount of liquids you're adding to your pan is one inch from the top, maybe more depending on how many potatoes, because it will rise.
Add your spices and half tea spoon of coconut oil.
Turn the stove burner on(while cutting your potatoes) to the minimum, leave the lid on during the entire cooking process and pay attention. If it starts to boil then turn off the stove and if necessary put the pan on a cool surface.
Cut your potatoes into small pieces( 5/8 of an inch in thickness) so it wont take too long to cook unless you want bigger size but you'll have to add more water in the process as it starts to lower(evaporate) after a certain amount of time even if its 5/8.
Add your potatoes in the pan and put the temp to the max until you see its near boiling point to speed up the process, then turn the temp down to a bit above simmering. You don't want it to boil like mad.
When your potatoes start getting a bit tender, that's when you add your pasta and quinoa. I used 1/4 cup of quinoa and it was a tad too much making the liquid thicker than what i prefer. Also, If i'm not mistaken rice pasta cooks a bit faster than other pasta's.
When your pasta and potatoes are cooked, add your lentils, mix well, turn off stove and let it sit there for 15-20 min so the liquid can thicken some more. If its too thick just add a bit more water.
