A Meal in the Sun

Today was a beautifully sunny day here in the UK, so I took this opportunity to catch some of those luscious rays.

It can be overcast for up to two thirds of the year on the British Isles and so one must take every chance one can get to bask in the good weather.

I headed out to the store around mid day. I don't eat breakfast and usually have a meal around mid afternoon. I never eat more than three meals and often times only eat one meal a day.

I go by the motto that to eat light is right. I eat light in terms of environmental impact as all the food I eat contains no meat or dairy. Please see: http://www.cowspiracy.com/ for more details.

I also eat light in terms of the actual food I do eat. I would say 70-80% of the nutrients I get is from foods that are very low in density, often liquid. I like to drink 1 or 2 cups of Organic Tea a day too.

I consume a lot of fruit and vegetable drinks. This includes almond and soya milk, soups and diary free soya yogurt.

I like to eat vegetable pâtés and things like hummus and guacamole too, along with almond, pistachio and peanut butters. I also eat a lot of fresh organic avocados, mangoes, bananas and other fruit and vegetables.

My main 'heavier' staple foods that I cook are organic brown rice, organic wholemeal pasta and organic oats, along with an assortment of beans and pulses. I often buy various nuts and dried fruits as well.

So back to today. I went to a health food store I brought the following:

500ml 100% Cold Pressed Coconut (with pulp) and Beetroot Drink

This combo was very powerful. It tasted delicious too :)

Coconut has loads of great B vitamins and minerals, like B6 and Iron, great for maintaining a strong immune system. I have not had a cold or bug for such a long time I cannot remember the last time I did.

500g of Organic Vanilla Flavored Soya Yogurt

Soya Bean has some of the best quality protein around. Far better than any meat or dairy source.

40g of Lentil Chips Chilli and Lemon Flavor

I have always been vegetarian and in the last 5 years or so I have been vegan too. I feel that to not eat meat and dairy can only be of benefit to oneself and the larger world.
