Pasta with Creamy Vegetable Sauce 🍝🥗🥕
Who else loves pasta? I’ve always been a huge fan of it but pasta on its own can taste pretty bland. That’s where sauces come in. They are such an important part of every pasta dish.
Until recently I’ve always used store-bought sauces. My favorite was the tomato one but after eating it for a while I got kinda bored of it. That’s when I decided I’m going to start making my own pasta sauces. I’ve never realized how easy they are to make until I started making them. Plus, they are way cheaper and healthier than store-bought ones and you can customize the flavors however you like which is in my opinion the best part of it.
This pasta is an ultimate lazy meal since it only takes about 15 minutes to make. It’s also great for meal prep. It stays fresh in the fridge for up to 5 days. Just reheat it and you are ready to go.
Pasta is also a great way to get some extra vegetables in. It’s so easy to sneak loads of vegetables in it and it’ll still taste amazing.
I served mine on top of some leafy greens for extra nutrients. They also added freshness to the pasta which was great since the weather is getting warmer and warmer every day :)
Pasta with Creamy Vegetable Sauce 🍝🥗🥕
Ingredients:
• 200 g pasta
• 3 large carrots
• 2 medium potatoes
• 1 cup peas
• 2/3 cup plant based milk
• spices
Method:
1/ Peel and cut carrots and potatoes. In a small pot add potatoes and half of the carrots. Boil until you can easily stick a fork in a piece of potato or carrot.
2/ In an another small pot add the remaining of carrots and peas. Boil until cooked, then drain.
3/ Cook pasta according to instructions on your packaging. Drain once cooked.
4/ Once potatoes and carrots are cooked, drain and transfer to a blender. Add plant based milk and spices. Make sure to add a lot of spices (I’m talking about a few tbsp otherwise it’ll taste bland). I used smoked paprika, curry powder, turmeric, pepper and salt. Feel free to use whatever spices you like. Blend until creamy and smooth.

5/ In a large bowl add pasta, vegetable sauce, carrots and peas. Stir until evenly incorporated.
6/ Serve right away or store in a fridge for up to 5 days.
