Growing Echeveria like bonsai

These look like Graptopetalums but they are actually a cultivar of Echeveria elegans which have gone pink or purple from the cold because it is winter. The thick, compact leaves are caused by growing them in the same pot for a while. They get good light but not much direct sun and I don't water them very often.

As contrast, this is the same plant, growing in a small amount of soil but it's only been one season

This look is highly prized by some succulent growers and it is a stressed look from a combination of sun, cold weather, little water and many plants in the same soil. I prefer it to the very green, stretched appearance that many echeverias get if grown under softer conditions. These are all about to flower, the mini plants you see poking out are not offsets but flower stalks, which will start elongating soon.
