Guide to making frozen yeast
Yeast is the most expensive ingredient while home brewing. I use to harvest my yeast for couple month, I always had 2 kind on hand. But I just found this awsome guide to make frozen yeast. That will definetelly be a big game changer when I will have my beer room back in operation again..

I have all the equipment and material for freezing, but have not done it. When I buy new liquid yeast, I make a starter, and split that off into at least 2 (sometimes 4) mason jar containers. Each time I make a new beer, I grab one of those containers and make a new starter. I then use half of that for me beer, and put the other half back into a container in the fridge.
That way, I always have a lot of viable/fresh yeast on hand that gets cycled through consistently, and many varieties. Nothing beats always having fresh yeast on hand, so you can brew whatever style you want, whenever you want to.
I don't know if freezing yeast is worth the trouble, but I still might try it someday!
I wouldn't keep yeast in the fridge more than 3 month without expecting serious drop a viability... But with a good starter, you can't go wrong. I wonder how long I could keep a viable stem cell with this process.
A good starter proves everything. To be fair, when you freeze yeast, your viability goes right into the toilet, but you get serious long term storage. I've had luck with CLEAN yeast in CLEAN mason jars up to a year, as long you put a lot of yeast volume in to start (a good full cup of yeast, roughly, at least). As always, a starter proves it in any case!

Thank you for an excellent guide! I will be doing some yeast harvesting later this year and this is going to come in really handy.
See if I can salvage the dreg of Rochefort yeast that has been withering away in my fridge for a loooong time...
