BLACK CORN
Black corn has a jet black kernel with a slightly purplish hue. Depending on the variety, the kernel can be white when young but develops the dark colors as they mature.
Black corn contains anthocyanins, a plant pigment that has anti-inflammatory and anti-oxidant benefits. Black corn does stain even removing the husks dyes the fingers purple.
Black corn is sweet but not as sugary the normal yellow corn 🌽 we know.
Black corn contains essential nutrients such as iron, vitamin A, phosphorus, thiamin, riboflavin, niacin, magnesium and folate.
It can be cooked as food, boiled and roasted. Some have used it to make a fermented alcohol beverage called masato.
