Quick Spicy Roasted Serrano Pepper, Garlic, Shallots, and Spinach Omelet
Roasted Serrano Spinach Omelet
- 1T Fat
- 1 Pepper
- 3 chopped cloves, garlic
- 1 Shallot, chopped
- Handful Spinach, chopped
- 6 Eggs
- Spices- Salt, Rainbow Pepper, Garlic Powder, Green Chili Pepper Powder, Cumin, Cajun
(Amount depends on desire, I did about a pinch each) - 1-2oz shredded cheese... if desired
Roast the pepper, garlic, and shallot with a little salt in a cast iron pan with the fat/oil. Stir frequently to not burn. Meanwhile, mix together the eggs, spinach, cheese, spices while preheating the oven to 360 degrees. Once garlic is roasted, remove from heat, and add in egg mix. Stir slightly, and add extra raw garlic if desired. Place in oven and watch carefully to not burn.
