Filled Portobello mushrooms

Hi, this is my first post in this community and I know it is about #photography and I do like to take pictures of food! and like to cook as well so I will share a step by step a recipe of filled Portobello Mushrooms.

#Portobello #Mushrooms because of size are really good for filling so this time I decided to filled them with Ñoquis (#Italian potato bits, that you have to precook - 7 minutes approximately).

Before you can filled them, you need to remove the stem and the brown filling it has (be careful to not break the "walls" of the mushroom). Save that part of the mushroom for later.

Now it is time for preparing the sauce!

First you need:

1 echalote or onion
3 garlics
chives
Mozarella cheese
The mushroom filling
Sour cream

You have to dice in little pieces the echalote or half onion, the 3 garlics and the mushroom filling that you reserved.
First with little olive oil you cook for 2-3 minutes with low flame the echalote or onion and the garlic, until they are little fried, then you add the mushroom filling and the diced chives, you have to stir so the mushroom water comes out. Then you add the cream so it dissolves and mixes well, at the end you add the mozarella cheese.

With the mix you cover the ñoquis, it is important that the mushroom walls are intact, if not the filling will be spilled.

When the mushrooms are filled, you cover them with more mozarella and parmesan cheese if you want.

It is important that in the cristal plate you prepare them you put some water for it to cook the mushrooms, just a little bit.

The oven has to be at 180º C, don't put it to high because if not the mushrooms will be sticked to the plate.

Don't cover them so the cheese can gratin and have that little burnt flavor.

After 20 minutes they will be ready!

I have to tell you again about the mushroom walls, because if not... this will happen :(

Now you can have a glass of wine of your preference to accompany your delicious Portobello Mushroom.

This is a Chilean wine... from a well known winery, let me tell you that this blend is great! Definitely I will buy more bottles of this wine!
