To snack we all like to eat a delicious dessert, that's why today I would like to share with you a delicious pumpkin cake, it is very simple and easy to prepare at home. We will see how this delicious cake is made rich in potassium, calcium and vitamin A.

Before starting the step by step of this rich dessert, I want to give you a small introduction of the pumpkin, this being a vegetable rich in potassium, calcium and vitamin A.

Because of its ease for growing squash or pumpkin is a vegetable that can be easily found in the diet we consume and provides important nutrients such as calcium, potassium, phosphorus, vitamin A, zinc, magnesium and iron in small portions. It is a vegetable low in calories and rich in nutrients, whose recommended consumption is up to three times a week, since it has a high water content that lowers its caloric value.

Ingredients (10 servings)

  • 1 medium pumpkin
  • 6 eggs
  • 5 cups flour
  • 2 cups of sugar
  • 250 g of margarine
  • 1 can of condensed milk or 3 cups of liquid milk.
  • 1 spoon of vanilla.
  • Raisins to taste (optional)

Preparation:

1.- First cut the pumpkin into medium pieces, then cook it with shell in a pot or container with water until it is soft. (It must not be undone). Preheat the oven to 180ºC.

2.- Let the pumpkin cool until it is at room temperature, remove the pulp from the shell and then put the pulp in the blender in small portions, until it is creamy. In the last portion to be liquefied, condensed milk or liquid milk is applied.

3.- In addition, margarine and sugar are mixed in a blender or with a wooden palette, once the mixture is lump-free, the eggs are applied, it is beaten very well until the mixture is well homogenous.

4.- To the mixture of margarine, sugar and eggs add the first mixture (already prepared) of pumpkin and condensed milk, proceed to beat and gradually apply the wheat flour until the lumps are removed and the mixture is creamy, the raisins are added to taste (optional).

5.- When the mixture is ready, pour it into a mold suitable for baking and already spread on margarine and flour, the pumpkin cake is baked for approximately 45 minutes. The final time will vary depending on the type of oven.

6.- Once the time has passed, check that it is ready (it is ready when a toothpick is inserted and it comes out dry), remove it from the oven and allow it to cool for approximately 15 minutes so that it is compacted and removed from the mold. Sometimes when you remove it it is still very soft and it seems to be raw even if it is not like that.
