Roasted potatos is one of my favourite! It may be a simple dishes but it is definitely not easy to make a perfect one! The tempature, the timing - all require the perfect control and experience! Thanks for your post I would give it a try for tonight dinner!

If you're vegan just replace the caviar with sea grapes (Umibudou), it will give you almost the same popping effect and saltiness... use olive oil and soja cream for the mash potato... Bon Appetit ;)

My goodness that looks delicious! I'm so glad it's avocado season here in Vietnam. Going to the market and making this tomorrow, sans oven ( as I don't have one atm. I can taste it now!
You can boil the potatoes and add avocado it tasts awesome too @vietnam-paradise
I like boiling them for about 5 minutes and then spicing them up and roasting or sauteing them with some squash or carrots. Sometimes I combine them with cabbage as well. Next time I do some cooking I'll have to post it.
