Know Filipino Food: Tapsilog

The word tapsilog is a combination of 3 words, tapa, sinangag and itlog, thus tap-si-log. Tapa is a Filipino version of beef jerky or cured beef. Sinangag is fried rice and itlog means egg. Tapsilog is a famous Filipino breakfast.

Almost all Filipinos have rice in their 3 meals everyday. We love our rice fried in the morning. Tapa is cured with spices and salt and preserved. It is served grilled or fried. I love it fried. The egg, of course, is a known breakfast staple food all over the world.

The side dish in the picture along with the tapsilog is called "atchara." Atchara is fermented shredded papaya and it serves as an appetizer for Filipinos. I think it's just right to add atchara to the tapsilog combo because as you can see tapsilog has no veggies in it.

There are many other breakfast combos similar to tapsilog and they all end with si-log (like corned-si-log, which means corned beef-sinangag-itlog and Bac-si-log or bacon-sinangag-itlog) in their names because this kind of breakfast has that fried rice and egg combo as a default.
