Vegan Stuffed Peppers
My family loves this dinner! Protein packed and satisfying. This is a good one to make for meat eaters or someone transitioning from an omnivorous diet to a vegetarian/vegan diet. 🌶
Ingredients:
1 cup quinoa
2 cups pinto beans or black beans
1 cup pico de gallo (roughly chop roma tomatoes, orange bell pepper, red onion, 1 jalepeno pepper, juice of 1 lime, 1 bunch of cilantro)
1 package of No Evil Foods Zapatista http://www.noevilfoods.com
1 onion
2 handfuls of spinach
1 lime
Bell peppers
Cook quinoa, sauté Zapatista and onion, hollow out peppers, mix zapatista, quinoa, onion, beans, pico, and 1 handful
of spinach and stuff into peppers. Top with a fresh squeezed lime and fresh spinach. Bake at 375 for 30 minutes. Serve with avocado. Mmmmmmm 🌶🌶🌶🌶🌶🌶
