Kurgan Beef (Fast and Easy)
Hot, Dark, Spicy madness in no time at all.
Except for the marinating, but that's just waiting! ;0)
There only thing to take down a highlander, oh yes - The Kurgan. Like it's namesake this dish is strong and fierce and apt to put a fire in your belly. Read on, The Kurgan awaits!!!
You will need
3-4 thin beef steaks
Rice for two
A small onion
Broccoli
3 cloves of garlic
1 big fat, red habanero or scotch bonnet pepper
1 tablespoon of tamarind paste
2 tablespoons of soy sauce
3 tablespoons of hot water
Let's go!
First let's get the marinade going
Finely chop your garlic and Scotch bonnet/habanero
In a small bowl combine your tamarind, soy and hot water. Stir till smooth then add your chilli and garlic.
Now slice your beef into hearty strips, place in a bowl and pour the marinade on. Work it in till all the beef is covered. I like to leave this for at least four hours, you can leave it overnight or as little as an hour. The longer the better though!
Once your beef is marinated..
Cook your rice, once ready set to the side
Whilst the rice is cooking, chop your broccoli and onion.
Give it a short stir fry on a really high heat for just a minute.
Now take the broccoli and onion out and put the pan back on the high heat, it's gotta be high!! We want to cook our beef for only a minute or so but at a ferocious heat to sear it and keep it melt in the mouth. As well as spicy enough to melt your mouth!
So wallop your beef into the pan with some of the marinade.
Don't over stir and cook for one or two minutes tops
Now artfully pile some of your rice in the middle of a bowl and add your broccoli and onion on top.
Take your beef off the heat and Bang on top of everything else on the plate!!
Raar, there can be only one!!!!
