Making a Baked Asparagus Casserole

Asparagus is healthy and tasty. If you are looking for something different to serve, give this recipe a try.

Things You'll Need:
5 tablespoons of butter or margarine
5 tablespoons of self rising flour
3 15oz cans of asparagus spears
3/4 cup of whole milk
3/4 cup mayonnaise
5 hardboiled eggs
3/4 cups of blanched almond slivers
3/4 cup cracker crumbs

Step 1

Melt the butter or margarine in a skillet. Gradually stir in the flour, followed by the milk and the juice from the three cans of asparagus spears. Cook over a low heat until the mixture begins to thicken. Remove from heat and fold in the mayonnaise. Set the mixture aside to cool.

Step 2

Slice the boiled eggs to create roughly five to seven slices from each egg.

Step 3

Layer the asparagus spears, sliced eggs and almonds in a casserole dish. Begin with a layer of asparagus, followed by a layer of egg slices and finish with a layer of almonds. Pour half of the prepared sauce over the three layers, then add the last three layers to the dish. Top off with the remaining sauce.

Step 4

Place the casserole in an oven preheated to 350 degrees. Bake for 30 minutes. Remove from oven and add the cracker crumbs to the top of the casserole. Bake for another five to seven minutes or until the crumbs are a golden brown. Casserole will yield six to eight servings.

Tips & Warnings

This casserole can be prepared in advance and heated up a half hour before serving without losing any of its flavor.

If you use fresh asparagus instead of canned, make sure to steam the asparagus until it is tender. You may also need to add another five minutes to the baking time to ensure the asparagus is the right consistency.
