Hello everyone! Hope you all doing good. I'm from Sri Lanka, we are a nation with proud history and culture. I think traditional foods are a part of the culture of a country, because traditional foods are always unique and show the prosperity of a country. Here I'm going to share the detailed recipe of "Kiri bath" (milk rice); one of a very popular traditional food in my country. I choose it because it take the first place in the list of traditional food in my country though it's very simple to make.

"Kiri bath" is a symbolic representation of every celebration in Sri Lanka. It is a usual breakfast as it is a simple dish that everyone can make at home. Many Sri Lankan families cook "Kiri bath" for every Sinhala and Tamil New year, birthdays weddings, anniversaries and in every occasions that we want to celebrate.
We only want rice, coconut milk, and salt to make"Milk rice" and those are inevitable ingredients in every Sri Lankan home. As a tropical and agricultural country, rice is our main crop and coconuts also greatly available in our country. As I mentioned above, doesn't "Kiri bath" show the prosperity of our country?

Let's cook the Sri Lankan "Kiri bath".

Ingredients (for four adults)

  • 2 cups of rice
  • 2 cups of water ( depends on the rice you choose)
  • 1 cup of thick coconut milk
  • salt (to taste)

Ingredients can doubled or tripled as your necessity.
It's better if you can use short-grained rice ("Kekulu haal"). Long-grained or medium-grained rice doesn't suit for this dish as rice has to be sticky to each other after it's been cooked.

Method

(1). Rinse the rice twice or thrice.

(2). Transfer washed rice in to a pot. ( As quantity of rice doubled after cook, make sure to get a large enough pot)

(3). Pour water and add salt.

(4). Cook on medium heat.

(5). After rice is completely cooked, pour the coconut milk and little amount of salt, if you want. (You can check weather salt is enough or not by tasting cooked rice.)

(6). After adding coconut milk stir it occasionally and maintain low heat.

(7). Leave it to cook, until it get soft and creamy look.

(8). Line it on a platter or tray. ( I covered the platter from banana leaves to avoid sticky rice to the platter and in our country we believe that banana leaves give sweet smell and taste to the foods.)

(9). Flatten and smooth the surface using banana leaf or flat spoon.

(10). Slice it in to square (any shape you want) using knife.

We can enjoy "Kiri bath" with "Lunumiris/Katta sambol" , fish or chicken curry, or with "Seeni sambol". Here I made "Lunumiris" as a side dish to "Kiri bath". "Lunumiris" also a traditional sambol which made up of dried red chilli flakes, onion and lime juice. It's a spicy side dish (most of Sri Lankans are spicy lovers).

Ingredients

  • 3 tablespoons of dry red chilli flakes (according to your preference you can change the amount)
  • 3 large onions
  • 1 lime
  • salt (to taste)

Method

(1). Slice the onions.

(2).Put sliced onions, chillies and salt on the grinding stone and grind them well.

(3). Get out the mixture and squeeze some lime juice to it and mix.

So here is the best step... Now you can enjoy it.
