Aebleflaesk - classic danish dish
The danish kitchen certainly is not famous in world cuisine, and for good reasons i may add. There is not that much to brag about. But a few of the old everday dishes are actually worth mentioning, specificly for the combination of simplicity and range of flavors.
Aebleflaesk is an old dish that has "survived" as a traditional in the christmas lunches. They are usually a buffet of classic danish dishes like "Liver pate", "Frikadeller", "Shrimps" etc. served on rye bread and flushed down with christmas ale and akvavit.
Aebleflaesk is a good solid meal in its own right and can serve as both a very cheap, healthy and tasty everyday dish
Ingredients
3-4 big slices of pork (aka. flaesk)
2 large apples (preferably red skin for the looks, but any full flavored ones will do)
1 small onion
2 lumps of butter
Dark syrup
Lemon juice
Salt
Pepper
Cut up the apples into small slices, not too thin. Slice the onion in this half rings. Throw em a pan and drizzle a bit of syrup and lemonjuice. Stir regularly.
On another pan place add butter, the pork and season with pepper and salt. Dont be shy, it will need a good deal of salt, and pepper is good in my opinion. You could use paprika instead add for additional flavor.
I like my apples and pork sort of medium done, but it all hangs on your personal taste. Some like their pork dark as coal :-)
Serve with a good ale and bon appetite :-)
My great-grandfather came over on a boat from Denmark so I love trying new Danish foods. My favorite so far has been ebelskiver and of course pickled herring. Will have to try aebleflaesk next!
