Bagnet de Iloco
I wrote about Thrist Day milk tea shop which I discovered to be diversifying its business with Mang Car's sharing the food shop. Mang Car's has full meals that are mainly Ilocano dishes. One of which is the famous bagnet.
The food store was not easily noticeable from the outside because aside from sharing the space, there was no billboard sign on the roof like the milk tea shop.
The only identifier of Mang Car's is the tarpaulin display on the glass wall in front of the establishment. It is not easily noticeable until you get close.
Inside the shop are two monitors above the counter. The monitors are playing the menu for each business. The one on the right has Mang Car's meals and the one on the left is rotating displays of the different milk tea flavor.
Mang Car's rice meal boasts the famous bagnet from Ilocos region.
Bagnet, locally also known as "chicharon" in Ilocano, is a Filipino dish consisting of pork belly (liempo) boiled and deep fried until it is crispy. It is seasoned with garlic, black peppercorns, bay leaves, and salt. The meat is first boiled and then allowed to thoroughly dry overnight before frying to achieve its characteristic chicharon-like texture.
While the meal set is available everytime, I realized their serving can be great for breakfast when my order was served. It was served with garlic rice, salted egg and slices of tomato to spice up everything.
The bagnet was crispy and crunchy. Add to that the savory marinate it had gone through beforw it was fried.
The salted egg yolk has turned brownish which gives me the impression that it has been days old already. My expectation was right. It was more salty than usual.
The crushed garlic was crispy and crunchy too. Its aroma made the meal more tempting.
Over all, it was a good meal specially if you match it with cool and refreshing milk tea.

I like the name of Thirst Day for a place like that milk joint. I've never had pork belly but it looks tasty!
You never had shrimp and other seafoods. Now, pork belly. What do you eat?
Oh man...I don't want to sound like a picky eater and we eat alot of fish like cod, tuna, tilapia and a few others. But I try to stay away from what I call "bottom feeders" lol.
And pork, I love pepperoni and bacon but try to limit pork in general just because I roughly follow Biblical diet guidelines...not real stringently but generally speaking. I don't think it's a very clean meat but occasionally I eat it.
But I don't want to sound religious at all because I'm not. lol. Very spiritual but not religious.
They say it's not what you take in but what comes out of your heart that makes you a good person. So don't be too conscious about food. 😊
Yes very true. No I'm not a fanatic, very loose rules! lol.
