Fish Thai Tom Yum With Anchovies Rice Recipe

Two weeks ago, I posted a Soba Noodles with Tilapia Fish recipe which was my first attempt of cooking fish as a pescatarian.Yes, this year I decided to switch my omnivore based diet to pescatarian. My reason is that I find picking a certain diet helps me with managing my weight. Not to mention, since I started cooking my expenses have drastically improved and I have more funds for my savings.

My cooking are mostly soup/liquid based since I love this type of meal. Today, I will share one of my favorite soup which is Fish Tom Yum. This dish is very easy to make and only takes about 40-50 minutes of your time for 4 servings. There are many variations of protein for this soup such as Shrimp(being the most common ones),chicken, beef or fish. In this recipe, I am going with fish and tofu. For the vegetables, I am using eggplant and mushroom. Also, I am not making the paste from scratch, I bought ready made Thai Tom Yum paste. However, I still have to add some spices to really bring the authentic Thai Tom Yum flavor.

How does Fish Tom Yum taste like? The paste itself is a complex mixture of various spices. Despite the red fiery color, it does not taste as spicy as you might think. Instead, it has mild level of spiciness. So, if you love spicy soup, you may have to add more red chilli or chilli powder to the curry. Additionally, Fish Thai Tom Yum has zest flavor that comes from additional lemon grass, Lime juice and Lime leaves. And if you want to describe in some words, this soup is zest, sweet, savoury and flavorful.

※ Important note : The main ingredients of this curry are Lime Leaves and Lemongrass. These are the keys to authentic Tom Yum Thai flavor.



Ingredients

1 liters of water
1 sachet of Tom Yum Paste
1 stalk of lemongrass
4 lime leaves
2 Big Red Chilli
1 Fish Fillet of your preference
100 grams of mushrooms of your preference
1 block of tofu
1 teaspoons of sugar
3-4 tablespoons of fish sauce (depending on your taste)
3-4 tablespoons of lime juice

Garnish

a dash of oregano
Fresh celery (finely chopped)



Instruction

1.First, put 1 lt of water into the pot and boil it
2.When the water is boiling put the paste inside the pot
3.Add a stalk of lemon grass,lightly smashed
4.Add 4 lime leaves, slightly crushed until you can smell the lime aroma
5.Add the lime juice
6.Put the fish fillet inside the mixture
7.Add the rest of the protein and vegetables
8.Add the chilli paste/ red chilli if you like it spicier
9.Wait until it cook and wait until the water subdue
10.Add garnish, serve while its hot with the Anchovies Rice.

How To Make Anchovies Rice

Making anchovies rice is easy. All you need is white rice grains and also dried anchovies. So, if you have rice cooker, making rice should be easy for you. Toss the grain, add water, add anchovies.
