What is it?
The large plant is thistle-like in appearance and native to southern Europe, North Africa and the Canary Islands. The leaves are the part that are used medicinally. The roots and flower heads may also have some benefits too! The active ingredient is called Cynarin.
What does it help?
- Lowers cholesterol - this may help ailments such as Atherosclerosis (and high cholesterol obviously).
- Restores the liver - useful for things such as alcohol indulgence!
- Increases bile production - has a Cholagogue action.
SAFETY ISSUES
Do not use if you are allergic to the daisy family or if you have gallstones.

And you're right 😁 My mum used to heat it up and we would dip it in melted butter. Unusual but very tasty!
