Sautéed cuisine of ‘wooden fish’ ( Indonesia : Ikan kayu - Aceh : eungkoet keumamah )

On this occasion, I would like to share with you the typical recipe of aceh cuisine that is cuisine of tumeh keumamah or also called the stir-fry dishes typical of aceh wooden fish. Keumamah Aceh wooden fish is the meat of boiled tuna, then dried by means of smoked to dry and the texture of the meat becomes hard as wood.

Keumamah ikan kayu khas Aceh adalah daging ikan tongkol yang direbus, kemudian dikeringkan dengan cara disalai (diasapi) hingga kering dan tekstur dagingnya menjadi keras seperti kayu.

INGREDIENT
BAHAN-BAHAN
- Wooden fish / keumamah
Ikan kayu / keumamah - Potato (small cut)
Kentang (dipotong kecil) - Coconut milk
Santan
Smoothed ingredient
Bahan yang dihaluskan
- Cabe merah
Red chili - Red onion
Bawang merah - Garlic
Bawang putih - Turmeric
Kunyit - Ginger
Jahe - Coriander
Ketumbar - Fennel / Jeramaneh
Adas / Jeramaneh
Sauté ingredients
Bahan tumis - Onion (sliced)
Bawang merah (diiris) - Lemongrass
Serai - Bay leaf
Daun salam
HOW TO MAKE
CARA MEMBUAT
- Soak the wooden fish for 2 hours with water
Rendam terlebih dahulu ikan kayu selama 2 jam dengan air - Then place the wooden fish that has been soaked into the basin
Kemudian tempatkan ikan kayu yang sudah direndam ke baskom - Puree the material and place it into the basin, add a little coconut milk and salt to taste, then stir evenly with the fish
Haluskan bahan dan tempatkan ke baskom, tambahkan sedikit santan dan garam secukupnya, kemudian aduk merata dengan ikan
- Set the skillet, give a little cooking oil
Set wajan, beri sedikit minyak goreng - Saute onion, lemongrass and bay leaves until fragrant (note : do not get scorched like in the picture he he)
Tumis bawang merah, serai dan daun salam hingga harum (catatan : jangan sampai hangus seperti di gambar he he)
- Put the wooden fish (keumamah) into the wok
Masukkan (keumamah) ikan kayu ke wajan - Add the coconut milk again and stir
Tambahkan santan lagi dan aduk
- Add the potatoes
Tambahkan kentang - Stir and wait until the broth is slightly dry and make sure it feels right
Aduk dan tunggu hingga kuahnya agak mengering dan pastikan rasanya sudah pas
