cheesecake as a birthday cake

My big hobby is making cakes.

I fell in love with cakes, when I was just a kid. The first cake was crincles.
They are very easy to make. They are high of carb, but it can't be everything perfect.

The second cake I love, also very easy to make, is my favorit - cheescake.

All cakes are very high in carbs and sugar so I decided to change the original receipe that is fitness aproved.
And I decided to make cheese cake without sugar.

Recipe for light cheesecake

Lining:

200 g of biscuit
30 g coconut butter

Cream:
500 g of low fat cheese
3 eggs
1/2 spoon stevia
500 g of low fat yogurt
1 lemon juice
Vanilla extract

I took low-fat cheese and half a spoon stevia.
If you didn't know stevia is healthy sugar. Its made out of plant and it's safe for diabetic to use.

Into low fat cheese I put 3 eggs (slowly one by one), 500ml low fat yogurt, one lemon juice and vanilla flavor.

Then I took the whole biscuits and mixed them with coconut oil.
I impressed it in a roasting mold.

Cover the biscuits with the cream and put all of this together in oven for 50 min on 200 degrees. Then take 200g of youghrt and cover the cream. After that put it back in the oven for 10 min.

Then the worst part of making cake, you have to wait to cool.

You can serve the fruits you previously cooked and cooled.

I have tried this receipe and it's delicious. It takes time to get used to stevia but i didn't mind it at all!

I love how you decorated the cake with the "2" on it.

I don't like Stevia. I'm very allergic to it and it tastes bitter. It makes me breakout in a painful eczema. I think companies that turn Stevia leaf into a powder add something to it.

Uh that's bad... Highly possible but I am very lucky too have neighbour who grow stevia and make products of this plant so I get it from the first hand.

Yes, for me they kinda taste the same, but I use powder or liquid stevia.
