We all know breakfast is the most important meal of the day, not so; as the saying goes - breakfast like a king, lunch like a prince and sup like a pauper!

BUT, and it's a big but, I'm really not a morning person, I come to life much much later on, so breakfast is not my favourite :)

I do have to rise early many mornings as I run a little self catering cum bnb establishment and some guests do order meals at times.

So it's rise and shine many a morning and no lazing around as there are mouths waiting to be fed here at Lily's Cottage :)

The kitchen aromas give away the usual fare of Bacon, Sausages, Eggs and Toast plus the occasional smells of pancakes/ crumpets/ flapjacks, bread baking in the bread machine which really is a delight for the senses, not to talk about the other oven bakes which do tempt me to have breakfast, and that is muffins!

So when my nephew @therneau and his wife @jusipassetti paid us an unexpected visit with the gorgeous Soren & Katalina, muffins definitely was on the cards as that is one thing the little ones love - Kata called it cupcakes breakfast!

So I decided to serve The Cook with Us team - @chefsteve , @pandamama and @offoodandart a Continental Breakfast Muffin Feast for Week #19 - Breakfast Challenge.
I do hope you enjoy it and would like to say a huge thank you for the weekly challenges.

I made Apple Bran Muffins for those with a sweet tooth; served with homemade Lemon Curd, Forest Berry Jam and Maple Syrup. Cheese & Corn Muffins were served with Cheese, Avocado and cold Ham. Yogurts and fruit were on the cards - or rather menu - as well :)

As we can only enter one dish, I will give you the recipe for the Apple Bran Muffins - please let me know in the comments if you would like the Cheese & Corn Muffin recipe as well, they're just as delicious.

Apple Bran Muffins
Beat together:

  • 100 ml Oil
  • 200 ml Brown Sugar
  • 2 Eggs
  • 375 ml Milk
    Add & mix:
  • 500ml grated Apples
  • 12,5 ml Bicarbonate of Soda
    Mix the following, add and mix well:
  • 250 ml Cake Wheat Flour
  • 5 ml Cinnamon
  • 125 ml Wholemeal Flour
  • 500 ml Bran

Spoon into muffin pans, sprinkle with seeds of choice.
Alternatively, brush muffins with honey as it comes out of the oven and dip into seeds.
Bake for about 25 min in a 180 C fan oven.

You have made a wonderful breakfast spread. How I wish Lily's Cottage is close by so that I can easily sample this breakfast or all the other treats you have enticed us with in the past.

Those apple bran muffins look delicious. The variety of seeds makes a beautiful display and gives a nice texture to the muffins.

Hello friend, very true of what you say breakfast is the most important food for human beings, since we come from a long hours without consuming food, to the test I refer, that sometimes we think that avoiding food at the first hour in the morning, we lose weight, but as the days go by we see that we gain weight, our body is a perfect machine, not receiving food recourse to the reserves we have in our body. The best breakfast is the one that you present us as a continental breakfast since it gathers all the necessary vitamins to maintain us, healthy body and mind. Before breakfast was not the most important thing for me, then not having breakfast helped me gain weight, so when I started with my exercises I realized that it is essential to have breakfast in the morning, which is what gives you energy.

This breakfast is very particular each country has its way to breakfast, I would love to try this

So right @yesslife! When i fractured my ankle a couple of years ago and mom was feeding me a large breakfast, i actually lost weight believe it or not!

You have definitely made eating any type of bran muffin more inviting!
I don't particularly care for the taste of bran... but these combinations could change my mind.

Yep I agree, bran on its own is tasteless but with the other added ingredients it makes for a great muffin! Thanks for stopping by @goldendawne :)

This is a different breakfast for me and I like it

In my country, Arepa usually eats, do not know if you've ever heard of the Arepas? very little we eat something different but it would be good
