Colour Challenge: Wednesday Yellow - The goodness of sweet potato
Today I have managed to find from my archives something that will fulfil today's #colorchallenge (Wednesday Yellow) started by @kalemandra
And what more better to introduce you in today's colour with one of my favourite food: The sweet potato!
Most of the time I would probably choose the orange one, but since this is the yellow Japanese (super) sweet potato, I would also like to share in what are the awesome nutrients found in it compared to a regular potato.
A lot of the Malaysians love to deep fry it with yam and glutinous rice cakes, but those aren't that healthy. For me, just boiling it and have it as it is is nice enough.
You can also have an option to turn it into a dessert by adding some rock sugar and ginger.
My mom sometimes even mix it with flour and create sweet potato pita bread, which is super simple to make and pretty filling too; or sometimes, she loves to steam it. I might try to search for the recipe when I get home to visit my parents later in July.
