Homemade zucchini muffins with bacon and onions

Use these baked goods as a snack or serve as a snack, best with sauces. Using this recipe as a basis, you can experiment and add vegetables to your taste.

Ingredients


  • Onion 1 piece
  • Vegetable oil 3 tbsp. spoons
  • Zucchini 1 piece
  • Salt 1 tsp
  • Eggs 2 pieces
  • Sugar 1 tsp
  • Flour 500 g + for sprinkling
  • Baking powder 1½ tsp
  • Smoked bacon 70 g

Preparation


  1. Cut the onion into small pieces. Then, stirring occasionally, fry it with 2 tablespoons of vegetable oil over medium heat.

2 ․ Grate the zucchini on a fine grater. Season with salt, stir and leave for 3-5 minutes. Then squeeze out the resulting juice.

3 ․ Whisk the eggs and sugar lightly in a bowl. Pour baking powder into this mixture and stir.

  1. Cut the bacon into small pieces and add them to the dough.

  2. Put the grated zucchini with fried onions (along with butter) in a bowl with dough and stir.

6 ․ Lubricate the muffin tins with a little oil and dust the sides with a little flour.

7 ․ Fill the molds with dough. Place in an oven preheated to 200-220 ° C.

  1. Bake for about 12-15 minutes, until muffins are golden brown.
