Andhra Style Gongura(Sorrel Leaves)Pachadi
Hi all, Today I come to another Traditional dish using Gongura. Most in every function or festival we see Gongura Pachadi Recipe in Andhra.
Gongura is called in different names in different regions along it comes full of nutrition with different tastes.
Sorrel leaves contains rich in iron, vitamins, folic acid and antioxidants. This leaves highly recommend for patients with heart conditions and diabetes.
Very simple recipe but a good combination with hot rice with Ghee.
Ingredients For Roast
Peanuts: 100 grams
Red chilli : 3
Green Chilli : 3
Coriander Seeds: 1 tablespoon
Gongura leaves: 2 cup
Salt and water: As required
Tamarind: 20 grams
Ingredients For Seasoning
Oil : 3 tablespoon
Musted Seeds: 1 teaspoon
Urand dal: 1 teaspoon
Chennna dal: 1 teaspoon
Curry leaves: 5
Garlic Cloves: 5 number
Onion: 1
Turmeric Powder: 1/2 teaspoon
Preparation:-
- Before preparing first remove sorrel leaves from stems, then rinse in water 💧 and keep aside.
- Now heat a pan, now dry roast peanuts, coriander seeds, green and red chillies.
After roasted, transfer into a plate.
Now again heat a pan on adding 1 spoon of oil, now add sorrel leaves to it. Fry it up to get smoother. It took up to 3 to 4 minutes. But keep flame in medium.
- Now Transfer into a plate,
- After cooling down on adding required salt, water, tamarind pulp make it a smooth pachadi using a mixer grinder. Then transfer into the bowel.
- Now heat a pan for preparing seasoning for this pachadi.
For this heat a pan on adding oil, then add all seasoning I graduated one by one. Add garlic and chopped onion too.
- Fry all those up to 3 minutes.
- Now transfer this seasoning into already prepare pachadi.
- Mix well, taste it, if any needed add then serve with hot rice.
A simple traditional Gongura Andhra Style Pachadi is ready to enjoy.
