✨Homemade ravioli ✨

Ingredients:
100g ‘00’ flour, 1 egg per person
Spinach
Ricotta
Parmesan
Lemon juice
Salt and pepper

Method:
1️⃣Mix egg gradually into the flour to form a dough
2️⃣Knead for 5 mins
3️⃣Chill for 30 mins then split dough in 2 and roll out thin
4️⃣Mix dried spinach, ricotta, Parmesan, lemon juice and seasoning
5️⃣Dollop filling evenly on bottom sheet
6️⃣Egg wash around the filling, place the second sheet on top and press lightly around each dollop of filling to seal
7️⃣Cut our pasta shapes
8️⃣Boil for 3-4 mins
9️⃣Serve with splash of chilli-garlic infused olive oil
