My weekend doughnut :-) - yummy
This is my favourite recipe, we usually eat it with home-made apricot jam. It's really tasty.
This is how I made it:
I mixed the ingredients of the dough:
500 g white flour
25 g fresh yiest
100 g sugar
the grated zest of one lemon
2 teaspoons of rum
app. 1 dl warm milk
1 egg yolk and one full egg
a pinch of salt
I take the spirals of my mixer and I make a nice smooth dough. I cover it and let it rest at a warm place until it rises to app. double size (this takes about 30 minutes).
Then I roll out the pastry (app. 1,5 cm thick).
I cut out the doughnuts with a glass and let them rest for 15 minutes.
I heat oil in a pan and fry both sides until they become nice golden brown (it takes only 2-3 minutes per side). Then I put them on napkins.

Looks good! Not sure what oil you're using to fry but try it with coconut oil some time if you haven't.
Whichever I have at home: either coconut or sunflower oil. But coconut is much better, you are right...
