Vegan

My guy recently decided to switch to a vegan diet. I was a vegetarian for eight years, in my teen years, but that was quite a few moons ago.

As Always

I'm being supportive. He is my favorite person, so whatever makes him happy, I am good with.
Rather than make two separate meals every night, or forcing dude to live on beans, rice and fresh veggies, I am experimenting.
I made chicken and cheese quesadillas for me and the kids the other night and made him ones with boca burgers and refried black beans topped with salsa. One night we did spaghetti (hold the meat and cheese for him). Last night, I made a massive salad with all the toppings on the side. I think that kids enjoyed building their own salads.

Tonight, I made this Bean soup, no recipe needed. I used a 5 bean mix, vegetable broth, carrots, red potatoes, onions, garlic salt and black pepper. Simple, yet satisfying.

Change....It Happens

This new diet he is on has changed my shopping and cooking habits. It is a good change though. More fresh fruits and veggies, because they aren't going bad as quickly now that I am serving them with most every meal. He also snacks on them, so we are wasting less. A week in and we are all good to go. I'll still be enjoying meat and cheese myself though. Although, I have never been one to eat a ton of meat, and I have a lactose intolerance, so I limit my dairy intake anyways. Give me all the burgers. Hold the cheese.
