Roasted Pumpkin & Ginger Soup
Ingredients:
- ~ 2lb pumpkin (roasted);
- 1 medium sized onion;
- 2 garlic clothes;
- 2 cups vegetable broth;
- 1 teaspoon fresh ginger (chopped);
- salt, pepper, nutmeg and cumin to taste;
- cooking oil.
Directions:
Heat your oil in a dutch oven or any other cooking pan you have. Add chopped onion, garlic and ginger. Cook at a medium heat, stirring occasionally until the onion is translucent.
Next, add in roasted pumpkin, vegetable broth and spices. Bring to a boil and simmer for about 10 minutes.
Puree the soup in a blender or food processor. Work in batches.
You can top this soup with roasted pumpkin seeds, golden flax seeds, like I did, or use your favorite nuts, herbs and/or seeds. Feel free to add in some sour cream, coconut milk or Greek yogurt to give the dish a smoother texture. Enjoy!

Looks delightful..pepitas on top look good! Roast garlic is also yum on top. Pumpkin soup is my fave. So versatile.. we just planted a heap of pumpkins here.

We use pumpkins a lot in Australia - mainly for roasting, but also in stir fries and sometimes even grated like carrot and cooked in that way - I've seen them in turkish gozleme with fetta this way and I must try those! I know a lot of people don't eat a lot of pumpkin but it's super common here. They keep well as well so they're a good food to grow. One thing we don't do with them is make lanterns at halloween!
Yeah, this is true, you can store pumpkins for a long time. They aren't very common or should I say popular food in Eastern Europe where I'm from, I always hated it, you guys might be the biggest pumpkin lovers in the world! :)
I think Australia might be! It's funny, pumpkins are so common here, as is beetroot, and aubergine - when I went to England, no one I met ate those things!! My husband was very puzzled, but soon saw how good they can be!! I think our pumpkins are very sweet and tasty!

Oh I love these recipes, I would never think you can do something so pretty with plain pumpkin hahaha.
My husband is not a fan of eggplants and beets, and pumpkins as well haha I like the first too, he likes pumpkin rolls :D.

Awesome. You are welcome. I still roast the pumpkin even for the curry full stop SBS is our multicultural television and they have some very good cooking shows as well. It is free to watch online not sure if you can see it from overseas.
