Crawfish Season
January is a blessing for numerous reasons: I was born, winter is coming to an end, and then there’s crawfish.
For those who don’t know, I’m Cajun and Cajuns loves crawfish.
Growing up, crawfish was a huge deal. January was the start of going all in. The beauty of crawfish is you can make literally anything with it. My maw maw used to make me crawfish tails and rice. With extra butter and salt. (I swear I eat like an overweight man).
I’ve learned of hundreds of crawfish recipes over the years but, the biggest and most famous would have to be boiled crawfish. And that could vary as well!
You guys do not understand my love for the mud bugs. (Oh yeah, they come from the ground).
