Cabbage Casserole

Cabbage casserole is so simple and tasty that once your family has tried it, you will have a new favorite to add to your menu planning.

You will need the following things:
1 to 2 pounds sausage
2 medium onions
2 pounds bacon
3 large baking potatoes
4 garlic cloves
sliced cabbage
shredded cheese mix
stewed tomatoes
As well as salt, pepper, and chili or red pepper flakes if you like them.

Putting together this casserole is very easy. I like to do all my prep work first, then all I do is add ingredients to the pan, layer by layer, until the pan is full. So let's take a look at how it goes.

First saute your sausage, but don't overcook as it will be going into the oven to finish.

Next you will cover the bottom of a 9” x 13” pan or casserole dish with your bacon.

The second layer should be your sliced cabbage. You will want to slice a medium head of cabbage so the slices are about ½ inch thick. Sprinkle about 1/4 tsp ground pepper and 1/4 tsp non-iodized sea salt over the cabbage when the layer is complete.

To the cabbage layer add your chopped garlic. If 4 cloves doesn't seem like enough, feel free to use more. I am using fermented garlic here. The fermentation doesn't take away from the garlic flavor, but it does tend to mute the bitter after taste garlic can have.

Next you will add your cooked sausage. I like to add extra meat so I usually use 2 pounds of sausage and sometimes that much bacon (precooked and drained) as well, but the bacon isn't necessary in this layer.

Layer your sliced potatoes so that they are single slice thick, but cover the layer below well. Sprinkle the salt and pepper on this layer too.

The final layer in your first round is the cheese. Feel free to use the cheese as sparingly or liberally as you wish. My family loves cheese so I tend to get heavy handed.

Finally, don't forget your tomatoes. My stewed tomatoes always add flavor because when I can them I add onions, garlic, celery and pepper to the mix.

Repeat this process until your pan is filled, if your final layer is cheese be sure it does not touch the casserole cover.

Bake the casserole in a moderately hot oven (400 F) until the cheese is melted and your potatoes and cabbage are done (about 30 minutes). You will want to cover the casserole during this time, then uncover about 10 minutes before done to brown the cheese. Let the casserole sit outside the oven for 5 minutes to allow everything to settle, then serve.
