Remembering Piedmont! Vegetable broth rice (+ recipe)
The vegetables we have used can be varied and adapted to the ones we like the most or the ones that everyone has on hand in their kitchen. It admits many others such as zucchini, pumpkin, green beans, broccoli, etc. One of the best things about this delicious vegetable rice is, precisely, its versatility.
Ingredients for four people
200 g of rice, vegetable broth (4 times the volume of rice), 1 clove of garlic, 100 g of green pepper, 100 g of red pepper, 100 g of carrot, 10 asparagus, 3 ripe tomatoes, 15 g of choricero pepper meat, oil, salt and ground black pepper.
How to make soupy rice from vegetables
One of the things we like most about this recipe is that it is prepared in a single container and, therefore, avoids a lot of fregoteo. It is important that the casserole we choose is wide so that we can fit all the solid ingredients in vegetable broth without overflowing.
We start by preparing the vegetables, so that once the process is started, we will be able to sew and sing. We wash and peel the carrots and cut them into small dice. We wash the two types of pepper and chop them. Peel the clove of garlic and chop finely. We wash and chop the asparagus. We cut the tomatoes in half and grate their meat, discarding the skins.
Heat a little olive oil and fry the garlic clove. Before it is browned we incorporate the two types of pepper and carrot. Stir and sauté over a low heat for 10 minutes. Add the grated tomato and chorizo meat, mix well and fry again a few minutes. When the tomato water begins to evaporate add the rice and stir well.
Finally, we add the vegetable broth and stir. We pepper to taste and bring to a boil. The moment it starts to boil, lower the intensity of the fire and let it cook over medium heat for about 12 minutes, stirring a couple of times during this time. Remove from heat, cover and let stand about five minutes before serving.

Vegetable broth rice is a very elegant way to fix a meal. A savory and very healthy dish, perfect for those days when we want to get away from meat and fish or for those who have a vegetarian diet.
