The Madame Jeanette is Suriname's own chili, a fiery and dangerous pepper. Don't be fooled by the gentle name, this pepper is habanero hot!!

👋 Nice To Meet You Madame Jeanette 👵🌶️

   The Madame Jeanette Chili Pepper is synonymous with Suriname, if you have ever heard of Suriname, that is. There is no market or corner shop in the whole country that doesn't have a bag of these firestarters ready for sale.

   Wait a minute, Suriname is a Dutch-speaking country, and they've named their own chili after a French woman. "What kind of tomfoolery is going on here?"

   All I can say is that Suriname is a cultural melting pot, and surely French Guiana played some role in the history of this chili.

   The Madame Jeanette chili is fire hot, anywhere from 100,000 to 350,000 on the Scoville Scale, possessing a similar spiciness to its habanero and scotch bonnet cousins.

   It is Capsicum Chinense, or Chinese Capsicum, just like habanero and scotch bonnet, but Madame Jeanette's slender yellow figure makes her easily identifiable, and it's also a bit sweet, but you'll be lucky to notice that. 🔥

👵 Madame Jeanette ⭐ Starfruit Sambal 🌶️ Recipe

Ingredients

   Our landlord gave us some starfruits the other day, and we had an abundance of chilies, so I set out to whip up a sambal with a Caribbean influence.   If you don't have access to starfruit, pineapple would be a good substitute..

  • 4 ripe starfruits
  • 7 to 10 Madame Jeanette chili peppers
  • 1 small red onion (2 shallots will work)
  • 2cm piece of ginger
  • 1 tbsp vinegar
  • 1 tsp palm/cane sugar
  • 1 tsp sea salt
  • juice of 1 lime

👳 Preparation Method 🔪

STEP 1

Remove the brown spines from the starfruit with a knife.
Next, roughly chop/slice the onion, ginger, chilies and starfruits being careful to remove the seeds from the lime and starfruits.

STEP 2

Place all the sambal ingredients in a food processor or blender.

STEP 3

Grind all ingredients until smooth, but be careful not to overprocess your sambal, it will cause the water to separate.

STEP 4

After you've ground your sambal, place it a clean container and store in the refrigerator.

   This sambal is a great condiment to any SE Asian or Caribbean meal. Although this is an Ital sambal, you may enjoy it with a meat of your choice as well.
