Pork Humba With Hard-Boiled Egg For Dinner

A blessed day to all of you and a pleasant evening on this side of town.

I hope you are done with dinner as well. There was nothing exciting that had happened for the whole day today, except that my laptop's battery was giving me a really hard time to do what I was supposed to do. A non-tech-savvy like me is not so lucky when things such as these occur. I just felt so useless and unproductive.

Enough of my story-telling....

Well, this is what we have for meal this evening. Compared to the Humba that we usually prepare, this one is quite different because we did add some hard-boiled eggs to make it even more delectable.

Tasty it is!

This is Pork Adobo. We call it Humba in our place.

Most Filipinos, if not all, know what Pork Adobo is. A lot of people also have different versions of how they cook their Adobo, popularly known as Humba in our dialect. Some use chicken to prepare adobo instead of pork, while others use both pork meat and chicken meat together, as main ingredients for their recipe. Others add some other ingredients to spice up their dish, such as adding hard-boiled eggs.

....to which I pretty much tried to do! (I'm talking about the latter.)


My Version Of Adobo

This is a short-cut version of the original adobo recipe, I suppose. This was inspired by my good friend, Juanne. I learned this style from him, when I assisted him in cooking adobo during one of our travels. The only difference is that this time, I incorporated in a new ingredient. I added hard-boiled eggs. (Yeah, I kept repeating it, I know.)

What to prepare?

We just need soy sauce, vinegar, sugar, scallions (or green onions), onions and garlic. Don't forget the main ingredient which is the pork. Then, prepare some hard-boiled egg. For this recipe I only used 3 eggs and sliced it in halves.

How to prepare?
  • Put the pork meat in the heated wok.
  • Wait until the pork turns brownish (for this dish, I just have the meat half-cooked).
  • On the same wok, you'll notice that the oil from the pork is extracted, you can saute the onions and garlic in here. Then stir it together with the pork.
  • Add in the soy sauce and vinegar. (Note: I used the 1:1 measurement. Depending on whether you'd want to have a lot of sauce for your adobo. I like my adobo to have more sauce, so I used half cup of soy sauce and vinegar).
  • Then, add in approximately 5 tablespoons of sugar, but if you find it a little more sour, you can add more sugar.
  • Simmer until the pork becomes tender.
  • Add in the scallions and hard-boiled eggs. Simmer again for at least 2 minutes.
  • Then, serve.
This is now the end-product.
