Bitter Melon

A pleasant evening on the other side of the planet.
Now that breakfast is served, here is my brief story about the food I am about to munch. Certainly, it is bitter melon. We call it ampalaya in our language. It is also known as bitter gourd. Most people don't like to eat this because it doesn't taste good, in fact, it is the most bitter among vegetables. However, I am going to tell you a good tip to extract the bitterness of this veggie.

Before cooking the ampalaya, pour on salt to it, you can put 2 to 3 tablespoon approximately. It totally depends on you. You can do the estimation. Then let it sit for about 30 minutes or so. As soon as your desired time passed, rinse the ampalaya with water.
Get ready with your pan and ingredients, then cook the ampalaya whichever way you want.
This is what we did with our dish. Heat the cooking oil in pan, add the onions and garlic. Next, add in the ampalaya. Stir fry until it's cooked. Beat an egg and add into the pan then stir fry a bit. Then add salt and umami seasoning to taste.
