Recipe for an easy lemon pie

Lemon Pie

I was looking for a way to prepare a lemon pie without so much process, that it was quick and easy and this is what I tried, let's see:

Ingredients

  • 150 grams of biscuit
  • 400 ml of condensed milk
  • 2 tbsp of butter
  • 1/2 cup lemon juice
  • Lemon zest

Meringue:

  • 1 egg
  • 2 tbsp of sugar

I use sweet cookies to make the base. I started crushing the cookies until it turned into flour.

Once it was crushed, I added it to a bowl and put the two tablespoons of melted butter, if you want your base to have more flavor, optionally you can add a tablespoon of sugar and a tablespoon of cinnamon and mix everything until you see that everything is integrating.

With all our ingredients integrated, we begin to shape it in our pie mold. I do not have a pie mold but I suggest that if you have a removable mold use that one, I did not have either, so I used what I had on hand.

When we have our base ready we leave it for a while to harden and we will prepare the filling.

Pour the condensed milk in a bowl and add half cup of freshly squeezed lemon juice along with the zest of one lemon peel and mix all of this until it is well integrated.

Now we proceed to pour this into our base and store it until the next day in the fridge. We will do this so it can be hard enough.

After the waiting time you can disassemble your Pie for the next step, if you did not have a Pie mold like me and you see that it is difficult for you to disassemble it then do not do it.

Here I have a dimension, I did not have a mold for this and when it was disassembled it almost ruined everything because it was difficult to get it out of there.

Now we proceed to make our meringues to make it look like a real lemon pie.

In a mixing bowl, add the egg white and beat it until it is half assembled, then in this step add the sugar and continue beating until you see that our meringue forms are already made or until we turn the mold and the meringue was totally intact. In this step I forgot to add a splash of lemon, this is so the meringue has a very bright color and is firmer.

And I also forgot that the egg white that we are going to use must be at room temperature and not cold from the fridge and guess who took it out of the fridge without remembering this. Exactly me.

So I added this mixture to a plastic bag because I don't have the pastry bag here at the moment and after fitting it well and trying not to let any air get in, I closed it. I proceeded to make an opening where the meringue came out to decorate.

While I was decorating the Pie I said. And now why this meringue looks like this, and that's when I remembered everything I did wrong ...
