Low-carb Paleo friendly high fat (the good kind) chocolate macroons!!

This is an AMAZING way to curb your cravings for sweets if you are on a low-carb ketogenic and/or Paleo diet! These are high-fat chocolate treats that look sort of like macroons, but have their own special magic! You can of course use this recipe as a base and improvise as you see fit! Please enjoy! Dry Ingredients:
-16 oz shredded coconut
-3/4 cup hemp seeds for a nice protein boost! (order from Amazon)
-1 cup erythritol or xylitol (order from Amazon)
-1/2 cup raw cacao powder (Amazon)
-1 cup cacao nibs (Amazon)
-1 tsp sea salt

Wet Ingredients:
-1 tsp vanilla extract
-16 oz cacao butter (Amazon)
-1 stick of butter (vegans can use coconut oil instead)

  1. Mix together raw cacao butter or cocoa butter (which is the same, only its much more processed) and butter (both melted together and mixed in a pan on VERY low heat, just warm enough to melt butters).

  2. Combine all dry ingredients in a big mixing bowl and stir them together to make it homogeneous.

  3. After the dry ingredients are nice and mixed, pour in the butter cacao oil mixture and stir until everything is thoroughly mixed together.

  4. Take an ice cream scoop and use it to for half-spherical scoops and lay them on a cookie sheet, or some sort of flat Tupperware, or whatever works.

  5. After you've scooped all the mixture into half-spheres, put them into the fridge for an hour to harden.

Voila, finished! You can transfer the hardened macroons to any storage container of your choosing and keep in the fridge. You can also store them at room temp if you want them to be nice and soft. But I usually store the main bulk in the fridge, and take out smaller batches to warm back up to room temp. Or just eat cold straight from fridge, but they are pretty dense from the fridge temp.

Eating foods that tastes unhealthy, but is in fact good for you always brings a smile to my face. I feel like I've found a loop hole to a magical world where I can eat an unlimited amount of the "all too good to be healthy" foods.

Some years ago I was prette fanatic about health and diet and experimented a great deal with oat based flour. My best recipe was fruit and oat muffins.

Unfortunately I do not have the recipe anylonger, but it was kind of similar to this:

I have not had the chance to try your chocolate macroons as of yet, but I just started my summer vacation today (weee!), so maybe I will find time during the next couple of weeks. Actually that would be a great activity together with my kids..

Is the "erythritol or xylitol" necessary? I am not sure what it is and I am not sure if I can find them here in Denmark..

Yes, the erythritol or xylitol is necessary to have them be "no carb" sweetened. If you are on the low carb diet, or paleo. But if you don't care about carbs, sweeten them with whatever tastes good to you! But the point of the recipe is keeping them in a low-carb high-fat state. You can probably order the erythritol or xylitol on line. That's how I get mine. ;-D These sweeteners are natural sugar alcohols that actually do contain glucose, but it's in a format that the body doesn't recognize, and gut bacteria don't consume, so most of it is excreted in the urine (90% of it), the rest is processed in the liver. I have recently started eating more raw food. Trying to avoid sugar and processed foods. That might be the first step towards a healthy low carb diet.
