Tomatoes with Eggs or Eggs with Tomatoes
This is a cool dish you that makes you look like you did something but really it was super easy.
Ingredients
2 tbsps raw organic olive oil
1 tsp oil for brushing
1 brush ( small non paint used paint brush) they make plastic brushes as well
4 large tomatoes
4 eggs
pinch of dried oregano chives or green onions for garnish, something green.
Salt and pepper to taste
Now we begin the cooking process. Preheat that oven to 350*f. Your gonna wanna brush an oven safe dish with the oil, dish should be snug on the tomatoes. We dont want them to tip over and make a big ass mess( this comes later).
Next cut the tops off the tomatoes and take a small spoon and begin to hollow it out. Leave space cause the egg is gonna go inside. So basicly scoop out the seep s and some of the flesh leaving room for aforementioned egg.
We are now gonna sprinkle the insides with a little bit of salt and place the tomato upside down on a couple paper towels. this will drain the rest of the water that tomatoes are full of. When this is done, season the inside with the pepper and dried oregano dividing the oil between the four. Bake for 20 mins in the prepared dish. After 20 mins take out and turn over. Now crack and place the eggs into the tomatoes and bake for another 6 mins. Serve this with a nice crustini or some sort of toasted bread.
Pretty easy and its gonna look like you did so much work. Great for brunch with a bloody mary cocktail.
