CUMIN & LEMON SWORDFISH
Ingredients
1 tablespoon cumin seeds
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 6-ounce Swordfish fillets, about an
half an inch thick give or take
1/2 teaspoon olive oil
2 tablespoons chopped fresh parsley
4 lemon wedges
First thing you do, preheat oven to 375*f. Toast cumin seeds in a large skillet over medium heat 2 minutes or until toasted. This will pull any moisture. Place cumin, salt, and pepper in a small spice-coffee grinder, until finely ground. Coat all sides of the fillets with cumin rub.
Next heat up the oil in oven safe pan over a high heat. Add fillets; cook for 2 minutes on each side or until golden brown. Now throw the oven safe pan in and bake at 400° for 4-5minutes. To finish this super awesome dish sprinkle with fresh parsley or chives and garnish with with lemon wedges. I serve this over prosciutto wrapped asparagus.
