Char grilling vegetables has an intoxicating effect for aroma and taste. The quick heat releases moisture and sugars while giving the vegetables a smokey flavor.
This technique has been used around the world since time immemorial but is always found as a prevalent preparation method in Asia.
Here we see the daughter of a friend of mine char grilling some garlic, onion and ginger root. Her mother is a good cook who understands her ingredients. Her soups are popular and her street stall restaurant is often full of people slurping her soup. The soup is kept simmering throughout the evening in a large stainless steel cauldron.
On a side note I am sure they are nattering away in the background about how funny they find me! 😉
