Cambodia Chronicles : Amazing Vegetarian Pho - What A Find! 😃

The Vietnamese have a soup which they make that is extremely delicious. It is known as Pho but I believe it is pronunciated differently than it is spelt in English. It is often eaten for breakfast but any time of the day or night is a good time for Pho in my opinion! Especially the new Vegetarian version I found! 😉

Vietnamese Pho

Vietnamese Pho is mostly made from a strong broth of often beef bones which are simmered for hours. It is extremely tasty and the big steaming bowls come filled with rice noodles, fresh bean sprouts, Vietnamese mint, chillies, limes and other condiments. Pho often contains very finely cut meet which cooks in the broth.

Out of everything the best thing about Pho is the broth. When they get it right it's so amazing. It's one of the tastes where I miss Star Anise if it isn't included. I don't normally find Star Anise appealing in cooking but in this instance it is vital for me. The first thing I always do with a bowl of Pho is taste the broth! 😉

Pho is warm, tasty and nourishing. The only problem for me has always been that I have never seen a Vegetarian Pho before. Well the other day I found one and it was *incredible!

Vegetarian Pho

Recently I was out in Phnom Penh with a crypto friend who had not tried Pho before. We looked for reviews online and went to Pho Fortune here in Phnom Penh, Cambodia. It was excellent!

The place was packed with couples and families having lunch, which is always a good sign. The aroma from the huge simmering stainless steel pots was fantastic. I have now tried a few of their dishes and all the Pho was excellent. The broth has a subtle but delightful amount of Star Anise in it.

Most interesting on the menu was the inclusion of a Vegetarian Pho which i think might actually have ben vegan. This was excellent and came with tofu and I am sure the broth had some taste of mushroom flavouring. Excellent! *In fact this is my new favourite Pho and I will be going back to eat there again just for the Vegetarian Phofor sure.

I have never made Vegetarian Pho before but one day I will take a friend with me who can speak Khmer and probe the secrets of the amazing Vegetarian Pho broth. In the mean time here is a recipe I found online which looks worth trying!

Pho really is fantastic anytime and if you've never tried it you must! 😛

If by chance you are passing through Melbourne I enjoy eating Pho here but never noticed a Vegetarian option - I should have asked!

we go to a Vietnamese Restaurant here called the Pho Facotory, sometimes twice per week. Love the pho .. if nothing else we get it to go. It is delicious and I highly recommend pho. We also enjoy the vegetarian spring rolls.

We are both vegetarian.... this post is making me want to eat some today. I plan to check out that link for the recipe you provided.

Ahhh I love pho. And when we pass Footscray we eat at that exact same restaurant. So good. I make a mean vego pho, I will steam about it next time i make it! 🍲
