3 ingredients for a dessert

I found it curious to see a recipe for a cake with only 3 ingredients, but I remembered that if it can be done, there is a difference between a sponge cake and a cake and that the first one does not have fat in its preparation, that is, it does not have butter, neither margarine, nor lard, nor oil, nor any of its derivatives, it also has a spongy texture and is very light, its cooking is very fast, it lasts approximately from 30 min to 45 minutes depending on the amount of mixture and the size of the mold . For its part the cake if it contains fat in the preparation.
I will share the recipe of the cake with only 3 ingredients.
Ingredients:
- 4 eggs
- 120g of sugar
- 120g of common pastry flour
Preparation:
Separate the yolks from the egg whites, put the yolks in a small bowl and the whites in a larger one, add 60g of the sugar to the yolks beat well with an electric wire whisk, after two minutes we will have a kind of whitish cream , then, we assemble the egg whites to the "almost" snow point, that is, we beat them with the electric wire whisk and when it starts to take some consistency around the minute and a half of the start of the shake we add the other 60g of sugar . We keep beating until it is completely snowmobile around a minute more, you can do these last two steps with a rod, by hand but, the beating time will increase substantially around 5 times.
Put the yolks in the bowl where we have the egg whites and mix with a spoon making enveloping movements, until having a homogeneous mass, add the flour, for this, sieve it with a sieve and add it as it falls, mix again making enveloping movements , until there is no flour speck. We cover the bottom of a removable mold for pies with vegetable paper, or baking paper, we put the mold in the oven, previously well heated to 180ºC, we bake from 30 to 45 ', it depends on the ovens, after the first half hour and, if is the golden cake, we prick it with a toothpick, if it comes out dry, we can remove it if it is still wet we leave it for a few more minutes, when the toothpick comes out dry, take the cake out of the oven and let it cool for 10 minutes, after that time unmold and put it on a rack, until it is completely cool.
