The recipe is very simple, there is no loss with the ingredients, nor with the preparation. Made with lower calorie ingredients (no refined sugar), than those normally found in the original recipe. It is also perfect to eat at any time of the day;) ... in the company of your love, without worrying more because you are skipping the diet !.



How to make a healthy cheesecake

Ingredients

-----For the mass----

500g of Requesón (ricotta cheese)

1 Greek yogurt

3 egg whites

1 Teaspoon of stevia extract (I have the estracta and its flavor is very intense, so I use only a teaspoon so that the
cheese flavor is not lost.)

4 chucharadas soups of muscovado sugar (100% whole sugar), or 100 ml of honey.

The juice of half a lemon

2 tablespoons of Maizena

1 teaspoon vanilla

1oo ml of almond milk.




--For the cookie base: ---

90 g of whole grain crackers

50 g of olive oil...

-To cover the cheeseCake: ---

200g of Strawberries

The juice of half a lemon

1 sheet of neutral gelatin

2 spoonfuls of honey or mashed sugar


Tips:

Put the oven at 240 ° C and leave the cake for the first 10 minutes at that temperature. then lower to 180 for 20 more minutes. (Do not open the oven is essential for a better result, if possible leave it in the oven until it is completely cold).

You can also make minicakes cheesecakes. You need a mold for silicone cupcakes (if you make the round cake I also recommend you bake them separately, same time)



For the dough: Mix all the ingredients by hand or with a blender (with a blender it is easier). Mix the eggs separately and add them to the dough little by little until you have a cream (3 minutes with the blender). Reservation.

For the base: Chop the biscuit either with a grinder, crusher, blender, or by hand with the help of a rolling pin. In a bowl mix the crushed cookies with the butter with your hand, until the cookies are moist.

Put the cookies in a removable mold (place a piece of vegetable paper on the side of the plate so that you can separate the cake from the base, once ready). Press the cookies until the base of the mold is covered. Pour the cheese cream into the mold with the cookies.

Take to the oven for 30 minutes at 180 · C

Prepare the strawberry coulis. In a pot place the strawberries together with the honey or sugar, mix over medium heat for 10 minutes, add the lemon juice and mix for 5 minutes. (here you can leave the consistency of the fruit as you prefer, with large, small pieces, or completely undone).
Cut the gelatin sheet into 3 parts, to put it on a plate with water to hydrate. once soft, add it to the strawberry preparation (while hot) and stir. Reserve in the fridge until you are going to serve the cheesecake.Finally put strawberries on top
