It's a tough time to be a small business. COVID19 regulations are putting a serious damper on the restaurant industry. I've been trying my best to support the local gems to help keep them afloat. Last week I was in Miami for the Bitcoin 2021 Conference. @nicollefiallo and I stayed a night at the Metropolitan by Como Hotels in Miami Beach. We woke up and decided to get breakfast at the restaurant inside the hotel. It was called Traymore by Chef Michael Schwartz.

I decided to order the "Genuine Benedict", which consisted of an english muffin, topped with crispy pork belly, poached egg, and kimchi hollandaise sauce. It was a fine take on the classic eggs benedict and a great way to begin the weekend in Miami.
