RECIPE: MEGA NACHOS - A Great Dish For Meatless Mondays!!

I am a family photographer, not a food photographer so you'll have to try this recipe to believe how good it is. ;)

There are occasions that we have this twice a week around our house!

This is a very flexible meal, meaning you can experiment with your own favorite nacho ingredients and find the perfect combination for your taste buds! This is really supposed to be a quick "dump" recipe for people on the go. If you happen to have all the fresh ingredients on hand, that's always the best way to eat!!

One recipe makes two batches of nachos, each in its own pie dish. Both pie dishes together can feed up to 4 people!

So if you're cooking only 1 or 2 people, feel free to cut the recipe in half and save your leftover ingredients for another meal.

Meatless Monday Mega Nachos:

1 bag of Mission tortilla strips
1 can re-fried beans
1 can black beans (rinsed, drained)
1 can corn (drained)
1 can Rotel (drained)
2 cups shredded Monterrey jack or Colby jack cheese (I prefer Colby Jack)
Chopped fresh cilantro

The following ingredients can be adjusted to your taste:
½ tsp onion powder
½ tsp chili powder
½ tsp ground cumin
¼ tsp garlic salt

~ Heat oven to 350
~ In a saucepan, mix re-fried beans and seasonings. Heat through, stirring often.
~ Place a layer of tortilla chips in the bottom of two pie plates.
~ First, spoon heated, seasoned re-fried beans evenly over both dishes. Then follow with black beans, corn, and Rotel.
~ Top with cheese and bake for 10-15 or until cheese is melted and bubbly.
~ Sprinkle cilantro on top and serve with salsa, jalapenos, sour cream, guacamole, or any of your favorite nacho toppings.

instead of using the can of refried beans I suggest you make your own. The canned beans are really low quality.

You're absolutely right! I meant to mention that for the refried beans as well as the black beans.
