Kettle Braai Lamb Shank
We often braai on Sundays and if we don't do a traditional braai,
we will generally do a roast on the weber...
Last Sunday was no exception,
other than the fact that
I felt like doing something a little bit different...
And so it was...
Kettle Braai Lamb Shank
......
Lamb shank has GOT to be
one of the tastiest dishes on the planet,
and is so utterly simple too...
Ok, so - first things first...
LIGHT THE WEBER!
YAY!
While the fire was busy getting itself ready,
I rubbed the shank in a little olive oil, salt and pepper
and then placed it in the roasting dish
and then on the weber to braise it...
Once finished with the braising,
I removed the roasting pan from the coals
and headed back into the kitchen to add the rest of the goodies...
What you will need
6 small onions
2 carrots roughly chopped
2 celery sticks roughly chopped
750ml chicken stock (I find the beef too rich)
1 can of diced tomatoes
3 - 4 sprigs of fresh lemon thyme
3 - 4 sprigs of fresh rosemary
one teaspoon of sugar
1/2 cup of red wine
Pretty much throw them all into the roasting pan
and bobs your uncle!
Leave the roasting pan uncovered,
but put the weber lid back on
and cook for 3.5hrs
and then... Bon Appétit
I know this should traditionally be served with mashed potato,
but I no longer eat potatoes... so rice it was :)
The meat was literally fall off the bone tender
as any good shank should be!
And needless to say,
the tummies were all very happy after!

Just Curious, why you no longer eat Potatoes? And Replace it with rice???
I ask because, i must do the opposite. Doctor said to me that i should eat less rice and Replace it with other Carbo like Potatoes, Corn, or Cassava.
I go through stages, hahaha!!!! honestly... I have a REAL weak spot for potatoes and I "do" eat them, but try to limit it to a minimum (most of the time lol) mostly, I fail haha!
I have also read similar things, so I have also been wondering which is better or worse.
Sometimes I just throw my hands up in the air because there is so much information out there, you dont know what to listen to!!!
Lol...Well i guess we'll never know which is good, even doctor cant control what people Weak Spot..for us Indonesian to completely replace rice is very hard, "belum makan nasi = Belum Makan (Not Yet Eat Rice = No Yet Eat)
I guess we have just to limit to the Minimum of Carbo and more of Protein to be more healthy..
Probably right :D and I think limiting carbs in general is hard for ALL of us lol!!! Especially BREAD!!! :D
