Sweet and Simple Vegan Pancakes 🥞
Who doesn't love pancakes on a sunny Sunday? These pancakes are everything you could wish for: healthy, fluffy and absolutely delicious, so go ahead and give them a try!
Banana Oat Pancakes • 2 servings
INGREDIENTS:
1 cup (2 ½ dl) oats
1 ripe banana
⅓ cup (¾ dl) plant milk (I used soy)
1 tbsp baking powder
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp cinnamon
INSTRUCTIONS:
Blend all the ingredients in a blender until you get a smooth texture. Let the batter rest for 10 minutes, so that it thickens. Fry the pancakes on a medium-heat pan (if it's too hot, you'll pancakes will be burned from the outside and raw from the inside) 1-2 minutes each side. The recipe will make twice the amount of pancakes seen in the photos. Pile them up, add your favorite toppings and enjoy! 😋

Very easy and quick recipe! I have all ingredients so maybe I try do it for dinner 😃 I like pancakes with peanut butter on top of it!

Does the soy milk taste through? I have slight issues with soy taste, so I've sometimes preferred rice or oat "milk", which has gone really well with pancakes.
I don't want to ruin a batch of pancakes to test out soy milk :D
I don't think the soy milk tastes through at all. However, feel free to use any kind of plant milk, I'm sure they'll work great as well! 😊
