I think most of that stuff is great! I'm not really a fan of Tom Yam for some reason. I've tried a lot of it too.
Phat Kaphrao can be a bit of shock to the uninitiated, and if you are near the place that is cooking it, the aroma is almost like pepper spray. I had to move away from an outdoor stall that was preparing it because it was causing me to sneeze and cough like mad (this was before Covid - so i wasn't immediately arrested.)
All in all, I agree with your list: These are the quintessential dishes of Thailand!
