ColorChallenge: Orange Tuesday Peruvian trout ceviche
Aloha!
This is an appetizer of trout ceviche I had while stayed one night at the Hilton Garden Inn, in Cusco, Peru. After a very clean diet of only fruits and vegetables and everything gluten-free for ten days at a medicine retreat; MunayMedicine, some fish was a very welcoming site.

I loved the added hominy, fried plantains and red onions.
